Tasting: trip through the seasonings of the Seridó

Last 24th, it was Currais Novos' turn and on the 25/11, the regional finals at the Saboreando Culinary Festival, promoted by SEBRAE-RN, through the project Roteiro Seridó, with the support of the Municipal City Halls and the ABRASEL-RN. Seven dishes were selected for the finals, one from each of the following city from the Roteiro Seridó: Acari, Caicó, Carnaúba dos Dantas, Currais Novos, Cerro Corá, Jardim do Seridó and Parelhas, where the festival took place. Besides the competition of best dish, there was also the chosing of the best butter and coalho cheeses in the artcrafts and pattern categories.

Among the competing dishes, there were: the buchada of goat, caipira chicken, salad of Gargalheiras fish, lasagna made of macaxeira, carne-de-sol (sun-dried meat) with butter cheese, stuffed italian bread with carne-de-sol and coalho cheese and a toasted goat. There was also the artcrafts exposition, the showing and tasting of Samanaú and Gota Serena cachaças, sweets and other delights from the Seridó. The excitement was also brought by Carlos Zen and his band.

The program of the event was also composed by a culinary workshop with the Chefs Eduardo Avelar and Samir Heckert and a lecture for the students of the tourism course of FAS.

The dishes tasted by the technical jury composed by chefs picked as the best dish the Buchada of Goat of the  Bar e Restaurante O Seresteiro, followed by the Italian Bread à la Sertaneja by Primor Panificadora, and in third place the Crôa Fria of the Bistrô do Gargalheiras Pousada e Restaurante.

"The Saboreando Festival is an iniciative that has the purpose of rescuing and valuing the regional culinary of the Seridó with typical dishes of regional recipes and also of producing new dishes from already known recipes, generating value and using the culinary as a tourist attraction, having in mind its recognition as cultural patrimony of the countryside of the state", says the project coordinator, Daniela Tinoco.
