The sociologist from Pernambuco, Gilberto Freyre, said once that "a kitchen in crisis means an entire civilization in danger of losing its characteristics". This particular danger the Seridó has never met, because its culinary has always been distinct and powerful, creating its own fame all around the country. From the traditional
carne-de-sol (meat of sun) to the famous
curdle and butter cheeses, and on to cakes and homemade cookies, the culinary of the Seridó makes anyones mouth water.
The influence of the portuguese settlers made sure to perpetuate and consolidate, in the region, traditions related to cooking and culinary that express themselves, in their plenitude, on the homemade production of cake, cookies and typical sherry.
The afternoon coffee, accompanied of cookies and other treats, is a tradition well-known through the region. The names are varied, such as
tarequinhos,
sequilhos of mandioca gum and
raiva, cookies of simple preparation made of sugar, mandioca starch, margerine, eggs and coconut milk. The
boleiras (those who make cakes and cookies) have the secret of what they locally call "bait", through recipes that have been passed from generation to generation.
